Pumpkin Pie (GAPS OK!)

How was your Thanksgiving ? It’s a season for pies!  So today I would like to share my pumpkin pie recipe with you – No sugar, No wheat floour, No preservatives and food additives.  Very healthy sweets!  And very easy…unbelievable!

 

 

Ingredients:

Filling:

  • a half of Medium size pumpkin ( ideally a Japanese kuri-kabocha-pumpkin)
  • 1/2 cup  homemade cream fraiche
  • 3 egg
  • 1 tea spoon  ginger juice
  • 1 teaspoon  each of cinnamon, nutmeg, allspice powder (If any of them does not work, you do not need to use)
  • 1 teaspoon  vanilla
  • 3-4 table spoon
  • raw honey
  • a pinch of salt

 

Crust:

  • 1 cup almond flour ( or any nuts flour)
  • 1 cup coconuts flour (If a nuts flour does not work, all coconuts flour is fine. Also if coconuts flour does not work, then all nuts flour is fine too.)
  • 1 egg
  • 3 tablespoon butter
  • 2 tablespoon almond butter ( or any nuts butter)
  • 1 teaspoon vanilla
  • 1 oz   very cold water

Appliance and tools:

  • A food processor
  • A stand mixer
  • 9 inch pie dish

Start to steam the pumpkin in a steamer.

Steam the pumpkin about 15min. or more depending on the size of cut and also volume.

 

Start heating the oven to 315°F.

All the ingredients for the crust into a food processor.

 

 

 

Use Pulse button till everything mixed evenly like this.


 

 

Shape the crust in the pie dish.

 

 

 

put a weight and bake it for about 50 – 60min.

Make sure the crust is not burned at the edge. You will bake it with the filling again. So if it is not baked all the way, it’s not a problem.

 

Take the weight off and cool down till the filling is ready.

You can use this pie crust for any pie!!!

Also you can bake the crust one to two days before you bake a pie.

Start to heat the oven to 325ºF.

Peel the green tough skin and mash the steamed pumpkin.

 

 

 

Use a stand mixer to mix all the filling ingredients in a medium speed for about 5min.

 

 

Pour the filling into the baked crust.

You can decorate the surface with a folk like this.

 

 

Then, Bake it for about 60 -75min.

By 60min. you may want to check the pie by inserting a chopstick or skewer in the middle. When you pull out the skewer, nothing stick with it, the pie is baked good enough. If something stick with the skewer, then bake it about 10min more. Then test again.

The surface of pie can be a bit burned.

 

 

 

Serve with whipped homemade cream fraiche or raw milk heavy cream!  It’s so yummy!!!
